Squash and Cheddar Chip Dip

Ever wonder what to do with squash?  How about chip dip! I made this recipe and guinea pigged it on the family. Everyone said it reminded them of artichoke dip, which is a good thing!



1 large squash or two small yellow squash (you can use zucchini, butternut, yellow, whatever!)
Salt and pepper
4 TB butter
2 TSP sage
1 large onion thinly sliced
4 garlic cloves, minced
1 8 oz cream cheese, room temperature
1/2 c. sour cream
8 oz cheddar cheese, shredded

Chop up the squash and microwave until soft and squishy. Add the rest of the ingredients  to the squash and mix together. Put into a microwaveable glass pan (like a 9" pie plate or 2 quart casserole.)

Microwave on high for 3-5 minutes or until melted through.

This dip tastes great with tortilla chips, Tostito Scoops work nicely.
