I love the summer months and all of the great fruits and vegetables that you get to harvest! Unfortunately most of the recipes for blackberries involve the oven. I am not a big fan of running the oven when the temperature is 80 degrees or higher.
I had the hardest time finding a recipe that would work in the microwave. So alas, I had to adapt a blueberry recipe, but, it was successful!!
Microwave Blackberry Crisp
2 cups blackberries
1/4 cup white sugar
2 TB flour
Topping:
1/3 cup oats
1/3 cup packed brown sugar
1/4 cup flour
1/2 tsp cinnamon
3 TB cold butter
1. Grease 9" pie plate. Combine blackberries, sugar and flour. Stir gently. Cover and microwave for 7 - 8 minutes, until thick, stirring twice (if you remember.)
2. Combine oats, brown sugar, flour and cinnamon. Cut in the butter until the mixture resembles crumbs. Sprinkle over blackberries.
3. Microwave uncovered 2 - 3 minutes or until the butter melts.
4. Let cool and tastes great with vanilla ice cream.
This recipe was a hit. You may even want to double the topping, since that is a favorite at my house. It has also been said that this tastes better the second day. Every day is great for me!
